  • Pork meat (fillet) — 500 grams
  • Quinoa — 1 Cup
  • Pumpkin — 500 grams
  • Ripe pear — 4 pieces
  • Olive oil — 2 tablespoons
  • Green onions — 4 stalks
  • Apple cider vinegar — 3 tablespoons
  • Coriander powder — 1 pinch
  • Salt — to taste
  • Pepper — to taste

Method of preparation

  1. Boil 3 cups of water, add the washed quinoa and the pumpkin and half tsp salt. Cook, stirring, for 12 minutes, or until the pumpkin is tender. Fold cereal with pumpkin in a sieve and return to the skillet, cover and leave for 10 minutes.

  2. Slice onions, separating the white part from the green. Pear cut into 8 pieces, removing the seeds. Meat cut into medallions, repel, RUB with salt and black pepper. Fry – the meat in a pan with 1 tbsp oil, 3 minutes on each side, remove to a plate and cover.

  3. In the same pan fry the white part of onions for 1-2 minutes, add the pears, a pinch of coriander and a quarter cups of water. Cook for 5 minutes to evaporate the water. Pour in the vinegar and simmer another 2 minutes, stirring occasionally.

  4. Add to quinoa with pumpkin, green onion, remaining oil and coriander, season with salt. Serve with tenderloin and pears.
