Georgia Peach Cream Pie
INGREDIENTS:
3/4 c sugar
2 tb flour
3 tb cornstarch
1/4 ts salt
2 c milk
2 well beaten egg yolks
1 tb butter
1 ts lemon juice
2 c sliced fresh peaches
1 baked pie shell
Sweetened whipped cream
DIRECTIONS:
1. Mix sugar, flour, cornstarch and salt. Add milk slowly
and cook over boiling water until mixture begins to thicken.
Add well-beaten egg yolks and butter and cook until mixture
thickens. Add lemon juice and cool. Arrange 1 cup sliced
peaches in pie shell. Pour in filling and top with remaining
peaches. Chill thoroughly and top with sweetened whipped cream.
