Cream Cheese Pie
INGREDIENTS:
1 c Quaker Oats, uncooked (quick or old-fashioned)
1/3 c Finely chopped nuts
1/4 c Brown sugar, firmly packed
1/4 c Margarine or butter; melted
16 oz Cream cheese; softened
1/2 c Granulated sugar
1 tb Lemon juice
1/2 ts Vanilla
2 Eggs
Sliced strawberries
DIRECTIONS:
1. Heat oven to 350 F. Combine oats, nuts, brown sugar and
margarine; mix well. Firmly press onto bottom and sides
of 9-inch pie plate forming a 1/2-inch rim around edge.
Bake 10 minutes or until light golden brown; cool.
2. In large mixing bowl, combine cream cheese, sugar, lemon
juice and vanilla; beat at medium speed on electric mixer
until well blended. Add eggs, one at a time, mixing well
after each. Pour into prepared crust. Bake 30 minutes; cool
on wire rack. Chill several hours before serving. Garnish
with strawberries, if desired.
