Stuffed Lamb Chops
INGREDIENTS:
4 T Lamb chops, thick
4 T butter
1 ea Garlic clove, minced
2 T Parsley, chopped
1 ds salt
1 ds Pepper
DIRECTIONS:
1. Make a pocket in the thickest part of the chop. Cream remaining
ingredients, add salt and pepper to taste. Insert mixture in pocket;
secure chops with tooth picks.
2. Broil 8 minutes for rare, 14 minutes for medium rare, 18 minutes
for medium.
Variations: Omit parsley, add tarragon or rosemary.
