Lemon Pepper Chicken
INGREDIENTS:
2 whole fryers
2 tbs. margarine
1 tsp. salt
1/4 tsp. black pepper
1 tsp. garlic powder
lemon pepper
paprika
lemon juice
DIRECTIONS:
1. Rub the chicken breasts with margarine & lemon juice.
Season with salt & pepper. Sprinkle chicken (inside & outside)
generously with lemon pepper, garlic powder, & paprika. Put
charcoal & water in proper pans of a charcoal , water smoker.
Let charcoal burn down about 30 minutes. Place prepared
chickens on lower rack of the charcoal smoker. Cook at least 6
to 8 hours. You can cook 4 chickens by placing 2 on the top
rack. If you wrap them in foil & freeze them, they are still
very good after reheating for about an hour or two
at 350° (especially the 2 cooked on the top rack).
