Blue Ribbon Banana Cake
INGREDIENTS:
3/4 c Shortening
1 1/2 c Sugar
2 Eggs
1 c Bananas; mashed
1/2 ts Salt
2 c Cake flour; sifted
1 ts Soda
1 ts Baking powder
1/2 c Buttermilk
1 ts Vanilla
1/2 c Pecans; chopped
DIRECTIONS:
1. Cream together shortening and sugar until fluffy.
Add eggs; beat 2 minutes. Add mashed bananas; beat 2
minutes. Sift dry ingredients together; add to creamed
mixture along with buttermilk and vanilla. Beat 2 min.
Stir in nuts. Pour into 2 greased and floured 9-inch
round layer cake pans. Bake 25-30 minutes. Cool layers.
Fill and frost as desired.
