Pickled and grilled vegetables – it’s delicious!

  • Plum tomatoes — 800 grams
  • Sweet pepper — 2 pieces
  • Zucchini — 2 pieces
  • Eggplant — 1 piece
  • Onion — 1 piece

For the marinade:

  • Olive oil — 0.25 cups
  • Wine vinegar — 3 tablespoons
  • Garlic (minced) — 1 clove
  • Salt — to taste
  • Pepper — to taste

Method of preparation

  1. Turn on the grill to medium. Tomatoes cut in half. Cut the pepper, remove the seeds, cut into 4 pieces. Zucchini and eggplant cut into slices. Onions finely chop, chop the Basil. Grate the Parmesan in the form of chips.

  2. Make a marinade, mix with a fork the vinegar, garlic, salt, ground black pepper, then add butter, whisk until smooth.

  3. Chopped vegetables, pour over the marinade, stir. Put them on the grill rack, cover. Bake: tomatoes – 6 minutes; peppers, zucchini, eggplant – 8 minutes; bow – 12 minutes. Spread the cooked vegetables on the line for the dish.Ratatouille pour the remaining marinade, sprinkle with Basil and grated cheese.

    TIP: It’s low-calorie variant of Ratatouille, as the vegetables, sprinkle with marinade, roasted on the grill without oil. Will be satisfying, if you submit a dish with short pasta or wrap in pita bread together with mozzarella cheese and slightly warmed on the grill or pan.
