For hollandaise sauce:

  • White wine vinegar — 1.5 tablespoons
  • Water — 1.5 tablespoons
  • Egg (yolks) — 2 pieces
  • Butter — 125 grams
  • Lemon (juice) — 1 teaspoon
  • White pepper — 1 pinch
  • Salt — to taste
  • Worcestershire sauce — to taste

Method of preparation

  1. Prepare poached eggs. In a saucepan pour water, add salt and wine vinegar, bring to a boil. One cracking the eggs into a small bowl and put in boiling water. Wooden spoon stir the water around the eggs, to faster proteins have coagulated. Cook for 3-5 minutes until hardened protein, and the yolk should remain liquid. Carefully one at a time, remove eggs from water and place on a plate.

  2. Prepare the hollandaise sauce. In a saucepan connect the white pepper and vinegar, heat to evaporate the vinegar by 2/3, add 1.5 tbsp of water, stir, bring to a boil, cook for 3 minutes. Remove from heat, pour into a bowl or small casserole, let cool, add yolks, mix with a whisk. Put the saucepan with the yolks in a water bath on low heat, stirring constantly with a whisk the egg yolks. Then a thin stream pour in the melted butter, continuing to stir so that the mixture is thick and creamy, add salt and pepper to taste, add the lemon juice and Worcestershire sauce.

  3. Serve eggs. Cut the buns in half and Pat dry the halves in the toaster. Brush with melted butter. Put on each half of bun 1-2 slices salmon, 1 poached egg, liberally pour hollandaise sauce. Decorate red caviar.
